what evidence do we have for such a thing, more throughout the early medieav period, but any period is fine, just to understand how widely adopted such a thing was

Just an aside, but LL Bean sells those basket packs.

Here's a basket mounted to a pack board. Pack boards are still used to bring supply's to the huts along the Apalatian Trail.

I think on the old issues of 'The Dragon' by the Company of St George had a section on ways of carrying things in medieval times, including images.

And I imagine that Karen Larsdatter's site would probably have a section on this too.

Quick internet searching for both of these should get you there.
