Hi Anders,
Are you looking for interpretations or are you looking for source material? I'm not sure of too many online interpretations. As mentioned above, Ringeck's harnisfechten section is an excellent starting point for source material. You can get English translations in both Christian Tobler's book Secrets of German Medieval Swordsmanship as well as the second book by Lindholm/Svard called Sigmund Ringeck's Knightly Arts of Combat. Both also have interpretations. If you can read German, the von Danzig fechtbuch can be found online, and it is also an excellent source.
