Depending on how picky you are about aesthetics and whatnot, there are plenty of latex and fiberglass based "LARP" (Live Action Role Playing) weapons that would be functional as a synthetic "beaters" for the purposes of just being able to safely beat the dickens out of someone with a fake weapon in some kind of sparring/playing environment.

A quick google of "Viking LARP Sword" came up with all kinds of results. Just don't expect something that's going to be superbly (or even remotely) historically accurate as much as it is just aesthetically pleasing in a fantasy or historical "enough" sense to be recognized by any random person as "Oh, that looks like a Viking sword."

If you are interested in simulation sparring with a waster Black Fencer sold a good nylon sword, the arming sword. For a viking sword you should remove a bit of the cross guard, as this is a late medieval sword (maybe you can ask directly them).

I don't have any personal experience with these swords, though I have used the synthetic long swords from Purpleheart..
