Two books that come to mind are World Bayonets 1800 to the Present: An Illustrated Reference Guide for Collectors
by Anthony Carter and Daggers and Bayonets by Logan Thompson. I think both can be found in myArmoury's bookstore.

Added: Swords and Blades of the American Revolution by George C. Neumann pictures a lot of European and American bayonets from the 17th and 18th centuries.

Don't forget:
"The Socket Bayonet in the British Army 1687-1783" by Erik Goldstien
or
"The Bayonet in New France 1665-1760" by Erik Goldstein. Of course this book is rare, I got a new copy for $9.00 American Dollars from here: http://www.servicepub.com/
