I am aware that there are Cavalry training manuals that exist for the 18th + centuries, but what about manuals concerning their use use prior to these periods? Any surviving materials of note that are available? (Turk, Cossack, etc.)

there's Wallhausen's Arte De Chevalrie (sp?) from 1616. Not a mounted sword manual, but a cavalry manual none the less. Or were you thinking more mounted sword fighting?
