I know that the weapon of the Middle East is a scimitar, however is there an actual martial art associated with it? If so how could I get my hands on a method of training?

Nope. Many types of sword are used in the Middle-East and not all are sabres (i.e. "scimitars"), and even the sabres come in many shapes and styles depending on what region you're in. With regards to Middle-Eastern swordfighting techniques, AFAIK all these are long dead. the nearest thing you will find to it is Gatka, Sikh martial arts. :)
And the original Arab swords were quite straight--they looked more like Roman spathae than anything else.
