I am hunting for primary sources on combat in Europe from the high middle-ages in particular. I have heard about descriptive accounts from this period but haven't seen them myself. Can anyone suggest a good place to start looking?

Froissart has some of course. I very much doubt a scrap taking pace across a small stretch of water is any different on either side. Also 'The Arrival' for the ED IV 1471 campaign
